Lobsters live in saltwater, such as oceans and seas, whereas crayfish live in freshwater that includes ponds, streams, rivers, and lakes. They both belong to an aquatic group, Crustacea, that makes up a large group of arthropods which includes lobsters, crabs, shrimps, or barnacles.
Although the Maine lobster and its close relative, the European lobster, aren't farmed, per se, there are some hatcheries in the U.S. and Europe that grow them from larvae and release the juveniles into the wild where they are then caught once they reach maturity.
However, the largest lobster ever caught in the world was captured in Nova Scotia, Canada, and weighed 44 pounds, measured 3 and a half feet long and was estimated to be over a century old. Lobsters molt in order to grow larger, and they grow their entire lives.

If you have a female lobster, you'll see red balls inside a cooked lobster. These are immature eggs called roe and are naturally black. Once the eggs are red — meaning they're cooked — they can be eaten. Roe is tasty on its own, but it is also used in sauces, bisques and stocks.
“As it turns out, lobsters don't mate for life,†explained Mr. Actually, male lobsters in particular are rather promiscuous. “Lobsters do have a monogamous bond, but it only lasts for two weeks,†said Trevor Corson, the author of “The Secret Life of Lobsters†(HarperCollins, 2004).
