Karate can be practised at any age as long as a person is relatively healthy. Older people may not be as strong, fast or flexible as someone in their 20's, but they can still practice karate at their own pace and derive great physical and emotional benefit from it.

First, 25–26 is not ideal but it's not too late as well. Many fighters started at 30 even after that and they were successful if not super successful. It also depends upon your fitness level, your body type, your current skills in martial arts. All these factors come into play.
No 40 is not too old to take up karate. I started at 35 or 36 and later transitioned to Aikido. It helps if you are in good shape to begin with but karate will get you into shape.
The appropriate age depends a great deal on the specific style/art in question, the type of dojo, and the particular child. Most Karate dojos I know take kids starting around age 4-6. Most Krav Maga dojos I know won't take anyone under 14-16; some won't take minors at all.

YES . If your current Physical conditions seems to be fit,you can learn teakwondo at age of 30. Although it will take sometime to gain the flexibility ,but with regular stretching exercise & practice one can resume his flexibility. Should I stop Taekwondo if I reach black belt?
No. It's never too late. As @Steve indicated, you will likely suffer a few more injuries and take longer to heal. But, your maturity will bring a more measured viewpoint on the techniques and their goals.

You can learn kung fu at home through DVDs. Chinese martial arts have been placed under the umbrella term kung fu. Therefore, there isn't just one kung fu; there are many different disciplines.

It's not very hard to learn. However it is hard to maintain the discipline required to study and practice. Some people just do not take kindly to taking orders and showing respect to seniors who would gladly impart their knowledge. Karate is a way of life.
