Photoshop picks only black or white. It sounds like Photoshop is in grayscale mode. Check your Colour preferences (Edit > Color Settings) and make sure all the Color Management Policies are "off". Open a new file (File > New), and set the mode to RGB or CMYK Color.
Go to Edit > Undo Desaturate, or press Ctrl+Z (Win) / Command+Z (Mac) to restore the color in the photo. Click on the New Adjustment Layer icon and choose Hue/Saturation from the list.
Convert a color photo to Grayscale mode
- Open the photo you want to convert to black-and-white.

The complimentary and opposing colours that bring a colour image to life are all reduced to black and white or shades of grey in a monochrome image and you have to look for tonal contrast to make a shot stand out. However, a good starting point is to look for scenes with tonal contrast.
Portraits, landscapes and any abstract sort of photo tend to be the best images for black and white conversions (though they can be great in color too, obviously). When it comes to street photos, travel photos, and anything more documentary in style, color is usually a better bet.
Monochrome photography is photography where each position on an image can record and show a different amount of light, but not a different hue. It includes all forms of black-and-white photography, which produce images containing tones of neutral grey ranging from black to white.
Set your digital camera to black and white or sepia and the natural colors in the shot are lost. On the other hand if you shoot in color you can always convert to black and white later and keep your full colored version also. You do not lose any quality in your image in doing this and keep your options open.
Colorize a Black and White Photo. First thing you need to do is open your image in Photoshop. You should go to Image » Mode » CMYK Color to convert your image into CMYK color. Now go to the Adjustments panel at the right side of your Photoshop screen and add the Curves adjustment layer.
The Timeless / Classic Quality From Black And White
One of the most common reasons people want to shoot in black and white today is because it lends a certain timeless quality to the images. This is because we still think of black and white as being a throwback to the photographic past. When to Use Black and White
In short, convert images to black and white when the light, form, or texture in the scene is more compelling than the hues of the subject matter. Black and white is a good choice when the color in a photo serves only as a distraction from the message you want the image to convey.
