Although species, such as yellow perch, have a year-round open season on Lake Simcoe, weather patterns show that safe ice often does not form until after January 1. Shallower sections of the lake, such as Cook's Bay, usually freeze first. Deeper portions, such as Kempenfelt Bay, can freeze over much later.
Some of the more productive areas for Jumbo Perch include Cook's Bay, Lake Couchiching, Virginia Beach, Snake Island, Innisfil Beach and Beaverton. Perch are very plentiful in Lake Simcoe and are caught on a variety of techniques.

Glenwood Park beach is a great beach for swimming. The beach is located on the southeastern edge of Cook's Bay of Lake Simcoe. The York Region Public Health samples beaches weekly from mid-June to the end of August.
Many Simcoe walleyes are well above the provincial norm in size and conservation minded anglers release those precious bigger fish to help sustain the walleye population - such as it is, in Lake Simcoe.
Lake Sturgeon are therefore currently considered as extirpated from Lake Simcoe and like you mention below do have a year round closed season.
Early ice, seems to be the best time to catch whitefish in numbers, with anglers targeting well known areas such as the deeper waters around Fox and Snake Island, Long Shoal, Kempenfelt Bay and Oro Beach. Most anglers fish in depths ranging between 75-100 fow, with the majority fish being caught in 80-85 fow.
Most anglers target Lake Trout, during the ice fishing season and use both live bait and a variety of artificial lures. Some of the more popular hotspots, include Kempenfelt Bay, Big Bay Point, Long Shoal, Oro Beach and the deeper waters north of Fox Island.
