You really don't need to rinse them at all, but if you want to rinse them. Rinse them in fresh milk. You can also give them a prebiotic like Prebio Plus which feeds them and makes them stronger and will also make your kefir more creamy especially if it is separating a lot.
Unlike yeast-based products, those made with kefir are lactose free and don't encourage the growth of yeast, which can cause allergic reactions in some individuals. Kefir grains can be made into a variety of delicious foods and can even be eaten alone.
Each packet may be re-cultured 2-7 times, using a small amount from the current batch to make a new batch. The milk kefir grains (a different product) can be reused indefinitely.
How long do active Kefir Grains last? Indefinitely with good care - they are a living, consuming organism that are in a constant state of reproduction. Some may get weaker over time for one reason or another (neglected, frozen, etc), but they will nonetheless do all they can to keep marching on!
Store kefir grains in water/sugar solution in the fridge:Use fresh non-chlorinated and non filtered water to avoid damaging the grains. You can leave them in this sugary solution for up to 2 months in the fridge. Leave the lid slightly open to enable airflow. You can store milk or water kefir grains this way.
Can You Make Kefir Without Grains? Depending on your definition of milk kefir, you can! Milk kefir grains are a very specific culture with a very specific combination of microorganisms. Milk kefir containing all of the bacteria, yeasts, and the polysaccharide kefiran cannot be made without milk kefir grains.
We recommend using 1-2 teaspoons grains for culturing up to 4 cups of milk. Some customers have reported being able to culture 4 cups of milk with as little as ½ teaspoon of grains.
To find out if your water kefir grains have died, you can test them by making them ferment a new batch. If the grains are dead, the water will remain very sweet and there will be no sign of fermentation. Another sign is the appearance of mould on the surface.
Place the kefir grains in clean glass jars or freezer-safe, zipper-sealed plastic bags. Add enough dry milk powder to cover the kefir grains completely, then seal the container and stick it in the freezer for up to two months.
Where do Kefir Grains Come From? Milk kefir grains are said to have originated in the plains of the Caucasus mountains a few thousand years ago. Nomadic peoples used kefir grains to preserve milk for long periods of time, long before refrigeration arrived.
Cover with a coffee filter or cloth, secured by a rubber band. Place in a warm spot, 68°-85°F, for 3-4 days. After 4 days grains should be plump and translucent. They are now ready to make water kefir.
Both water and milk kefir are beneficial in aiding natural systems of the body, and both are great for hydration. However milk kefir, made with either dairy or coconut milk, does surpass water kefir in probiotic potency.
Activating Dried Kefir Grains: If you bought your kefir grains in a dried form, rehydrate them by soaking them in fresh milk at room temperature. Change the milk every 24 hours until the grains begin to culture the milk and make kefir. It may take 3 to 7 days for the kefir grains to become fully active.
The biggest danger with leaving the kefir grains in the same milk for more than 48 hours is that they may begin to starve, which can damage the kefir grains. Separate the grains and put them into fresh milk right away. As long as the finished, separated, kefir smells and tastes okay, it can be consumed.
To freeze kefir grains, you need to rinse them, let them dry, and seal them in an air-tight container. Sprinkling a little powdered milk over them before freezing will help them to stay fresh for up to 6 months in the freezer.
NOTE It's best not to exposed kefir grains to temperatures of 30°C to 35°C [86°F to 95°F] for periods longer than 12 hours.

If you open it near the date on the label, it'll probably last for about five days. So it's best if you consume the kefir within 24 hours. The taste of kefir becomes strong over time. For homemade kefir, the freshness should last for about two to three weeks if you store it under proper conditions.
