Named after the city of Fez, Morocco, the hat represented the Arabian theme the fraternity was founded on. Today the fez is worn at Shriners' functions, in parades and at outings as a way of gaining exposure for the fraternity. Members customize their fez to show their allegiance to their temple.
A Grand Master is a title of honour as well as an office in Freemasonry, given to a freemason elected to oversee a Masonic jurisdiction, derived from the office of Grand Masters in chivalric orders. He presides over a Grand Lodge and has certain rights in the constituent Lodges that form his jurisdiction.
All Shriners are Masons, but not all Masons are Shriners. Shriners International is a spin-off from Freemasonry, the oldest, largest and most widely known fraternity in the world. TIL that wearing of the Fez hat is illegal in Turkey, having been banned in 1925. Ataturk did it because he wanted to westernize and secularize the country so they'd be more like Europe and less like the Middle East. He also changed the Turkish alphabet to the Latin one instead of the Arabic one.

Whilst there is no degree in Freemasonry higher than that of Master Mason, there are additional degrees that are offered only to those who are Master Masons. Most of these are supervised by their own "Grand" bodies (independent from the Grand Lodge).
Every Mason has the title "Brother", sometimes abbreviated "Bro." This title is "District Deputy Grand Master", and when a Mason is given that position, he is called "Right Worshipful", abbreviated "Rt. Wor." or sometimes just "R.W." Once a man has served his term as a DDGM, he is called R.W. for the rest of his life.
