Many phones and cameras have two options, timelapse and hyperlapse. The short answer to their difference is that a timelapse combines a series of still images into a video, while hyperlapse speeds up normal-speed video.

Yes, it's entirely possible to convert any suitable video into time-lapse using an iPhone app. A video is shot at a specific frame rate, likely 30 frames per second. On playback, that video is also viewed at 30 frames per second, so the video possesses a natural rate of time progression.
Expect to leave the camera in time-lapse mode for at least 30 minutes. An hour would be even better. Because everything is sped up, that 30 minutes of footage could result in just 10 seconds of a clip.
For one example, maybe you want to do time-lapse of clouds passing overhead and you want to find out how long you need to keep the camera rolling undisturbed to create a 30 second video at a frame rate of 30 fps with 5 seconds between shots (answer: 1.2 hours).

The battery has a runtime capacity up to 3 hours using the camera only. From what memory serves, the amount of runtime for the camera roll is limited up to 1-3 hours of continuous recording before the camera stops and an alert pulls up saying you used up the memory on the camera roll.
